Mexican flan

Mexican flan.... aka creme caramel

2 cans sweetened condensed milk (the small ones)
same amount of milk
vanilla pod or powder or essence
zest of 1 lemon
6 eggs

these ingredients will make ONE big flan dish and they can easily be divided as Idid here resulting in 3 dishes like the one on the picture.

empty the condensed milk in a pan over medium heat and then fill the can with milk at exactly the same amount, add vanilla and lemon zest and bring to boil on medium heat.
whisk the eggs lightly then when milk mixture boils pour some over the eggs while whiskingto raise their temperature then add the egg mixture to the milk mixture while whisking.
Pour the pudding over the caramel in the flan dish(s) and place in a pan marrie in a preheated oven 150C for 45-60 min

For the caramel:
add 1 cup of sugar (for the 2 cans of condensed milk) to 2 tbsp of water and put over heat till you get the desired color, nice golden one then pour the caramel in the flan dish.

For the pan marie:
put the flan dish(s) in a bigger oven dish and then pour boiling water to almost half the big oven dish.

Be very careful while moving the dish to the oven to avoid any burnings

when done, let cool then put in the refrigerator for 4 hours and then enjoy:))
