Tangy Lemon Bars!!!

Crust:

1/2 cup unsalted butter, room temperature

1/4 cup icing sugar

1 cup all purpose flour/maida

1/8 teaspoon salt (if u r using salted butter, do not add salt)

Lemon Filling:

1 cup sugar

2 large eggs

1/3 cup fresh lemon juice

1 tablespoons grated lemon zest

2 tablespoons all purpose flour/maida

For dusting the lemon bars:

Icing sugar

Method:
Preheat oven to 177 degrees C and place the oven rack in the center of the oven. Grease an 8 x 8 inch pan.

For the Crust: Beat the butter and sugar until creamy and smooth. Add the flour and salt and beat until the dough just starts to come together. Press the mixture onto the bottom of your pan and bake for about 18 - 20 minutes, or just until lightly brown around the edges. Remove from oven and keep it aside to cool.

Lemon Filling: Beat the sugar and eggs until nice and smooth.( i suggest u powder the sugar before u use it coz it helps in combining wid the eggs better). Add the lemon juice and zest and stir to combine. Fold in the flour. Pour the filling over the crust in the pan and bake for about 20 minutes, or just until the filling has set. Remove from oven and set aside to cool.

To serve: Cut into squares and dust with icing sugar. DONE! :)

Don't panic if after 20 min the filling still seems a li'l wobbly... it'll set once you let it cool... i panicked and overbaked my lemon bars... and the top of the filling got a li'l dark... :( you can adjust the amount of lemon juice in the recipe as per your taste... :) i followed the exact amount i mentioned above... n found my lemon bars a bit too lemony... alhamdulillah they were tasty... but had a li'l too much tang to them...
